Does anyone know of a way that we can keep our notifications working, but disable them for one individual (e.g., high level executive) who does not want to receive notifications?

hmm...not really unless you change their email to a fake one, or only assign your notifications to groups and/or branches the execs are not part of.
We have done some branch structuring to capture of BoD and Execs in a separate branch in some cases so if you can do that, you can then exclude those branches from your notification set-up.
