We are looking into trying more notifications, and one issue we have found is extended due dates for individual users. 

The scenario I am looking at is if someone is delinquent on multiple courses and my team wants to work with them to get these courses done while also keeping in mind their day to day tasks (extending the deadline).

 

Is it possible to do this on a case by case basis for an individual say someone is coming back from leave or such. So far, I haven’t found this is an option, but thought I would ask the community.

If I understand you correctly you want to be to able to update the due date for an individual’s course...yes you can do that by changing the “End of validity” date on the Enrolments tab. You can also do mass changed under the course properties where you add a default time frame and it changing it, you also have the option to apply the change to previously assigned users or not.
