I’m creating a course and want each individual assignment in the course to have it’s own due date (i.e. Assignment A is due June 1, Assignment B is due July 1, Assignment C is due August 1, etc.). I have a visibility date on the course as a whole (so everything needs to be in by September 1), but can I set it up so that learners are notified when a specific assignment is late?

There are not such settings for learning objects, only at the course level. Have you looked to use a learning plan instead of a single course? If you create a course for each assignment, you will be able to manage your due dates much more easily.

You want to have a due date in Learning Plan and at the same time in each course attached to it?
