How can I pull enrollment/seat count information into a report, or get via API? I cannot figure out how to get the enrollment count out. Clearly, it’s being calculated and displayed in platform. So, how do I get that data out?

Have you tried the report called Sessions - user statistics? It does contain the number of users enrolled.
