Does anyone know how the “Courses to Finish” list is sorted, AND if there is a way to change the sort options?
I’d love to have the list sorted by DUE DATE, in descending order, so what they have to finish is listed first. But I’m guessing it’s by enrollment date.

“Courses to Finish” list? Did you maybe change a localization setting to rename “In Progress” to “Courses to Finish”?
If yes, I’m not finding due date as a sorting option. In Admin > Manage Pages you can edit the sort order of the course widgets but only by these attributes.
You could use the Code attribute to set a sort order based on a completion priority. Not quite the same as the actual due date which could vary by user, but at least the most important courses would be at the top of the list.
