I’m trying to create a course that has multiple tracks to it. So a user can sign up for the overall course and then choose a track to follow. Some of the sessions would be common to all attendees, while others would just be for attendees that chose a certain track. I can’t figure out how to do that… anyone help?

this is a challenge for sure...you might look at using Learning Plans + course equivalencies to achieve this as there is no way to make learning objects “optional” or have a user choose 1 object vs another.
Depending on how many objects you have, and if a user only needs to complete 1 of many, you could make each object the “end object marker” so that as soon as the use chooses and completes 1 of the objects, the course is marked as completed.
Not sure if this helps your situation but it may be worth a try.
