I have a course that covers a particular topic and will have multiple videos about that topic. I also anticipate that there will be additional content to add about that topic in the future. If a learner has taken a course and completed all the materials but then new content is added, what happens? Does their course status change from complete to in progress? Is it better to place this content into a learning plan instead to better track progress in watching all the videos?

Great question! You are already on the right track with your idea to use a Learning Plan.
To answer your first question: No, the learner's course status will not change to "In Progress." In Docebo, once a course is marked as Completed, adding new training materials to it will not revert the user's completion status. They will remain "Completed."
Because of this, it is much better to use a Learning Plan for evergreen or growing topics.
When I've deployed this for organizations with similar requirements, we typically break the content down into smaller courses (e.g., one course per video or topic) and bundle them into a Learning Plan. Here is why this pattern holds up best:
When you add a new course to an existing Learning Plan, Docebo gives you the option to recalculate completed enrollments.
If you select this, learners who previously finished the plan will drop back to "In Progress" at the Learning Plan level until they complete the newly added content.
This ensures your progress tracking remains accurate without wiping out anyone's historical completion data.
