Has anyone managed to create a countdown page without the use of Javascript?

You could use an HTML widget or iframe a countdown from a website that provides countdown clocks.

Here is a site that has free clocks that you can create and it provides you a URL to iframe: https://www.timeanddate.com/clocks/freecountdown.html

hahaha @Annarose.Peterson was going to suggest the same thing...great minds! I just tested in the HTML/WYSIWYG widget and it seems to work as expected...quite cool...

Yup, this is what we do! I highly suggest it! It creates a fun and engaging page for your staff to come back and keep checking!
