Is it possible to assign just a lesson from a course? For example, we have an employee that goes through a course but in the future they need a refresher just one a certain lesson. So we would assign the lesson instead of the whole course? Is that a thing?

if you need tracking on the object it must be in a course. Depending on the type of content, you could add it to Channels if you have Coach & Share add-on.
