This is what I would do to try and capture what you are looking for:

• Run a Users - course report
• Under the filters Course enrollment status section, select only the “In Progress status”

• Under the view options, select “Course first access date” to appear on the report, as the user accessing the course is what will cause it to show as the “In Progress” status. 

• Then on the extracted report, you can filter the Course First Access Date column to be within the time frame you a looking for.
