Hi - for reasons I need to unAssign a Super Admin access at that level - how do I do this?

No worries! Simply go to the Admin Menu > Users > search the individuals name.
Click the 3 dots at the end of the users row, then select edit. You should be able to demote them in the “Level” section of their Edit User Menu.
