Does anyone know if it is possible to reset the due date of a course without changing the enrollment date? We have many people who have not completed manadatory courses but, having passed the deadline, they no longer appear among the to do list on the homepage.

Yes of course...on the Enrolments tab, select the users for whom you want to change the due date, then, her the Edit Enrolment option (under Choose options, green button) and enable the deadline and set a date.
If the change applies to everyone enrolled...you can also update your validity period under Time settings and then apply it to everyone. This option may set different due dates for users depending the options you choose.
