Is there a way to tell the date a user status changed from waitlist to enrolled. Currently I can only see/track the date they “enrolled” on the waitlist, not when they were actually moved to the session.

Could you use a notification? I don’t see a report, but maybe that could help or some other notification...good luck.
User Approved Into ILT Session
Notifies the audience that a user has been approved by a Superadmin in an ILT session. Users receive this notification when they are approved. Power Users must be assigned the course and user to receive the notification.
