Hi,

Some of our users will reference a training after they have viewed it once and taken the quiz. If a user go back to the training and try to watch it again, does it erase their previous status and quiz score?

if you are not archiving the record, the user should be able to review the content again without changing their score, etc. Note that once a course is marked as completed, it remains in the state unless an admin changes it or resets the content.

Currently yes. However, the sandbox currently includes an update that will change this so the original completion is archived. That was the “June” sandbox update (posted May 18), so it should be going to the live site relatively soon. It usually takes features 4-6 weeks to go from sandbox to live unless something get discovered during sandbox tests that would make Docebo need to delay.
