I can’t find a way to define a due date for a course (not an expiry date) that a user can see and use to plan completion of training on time. This type of due date would simply be visible for user planning purposes; it shouldn’t be the date that a course is no longer available to the user.
I’m interested in any creative ways people have dealt with this type of need.

+7We have due dates for some courses but always set them as “soft deadlines” so they can still access the course content after that date passes. On their My Courses page (or anything that the course “cards” are displayed), it will show the date as a deadline.
In this example, I set the due date at the enrollment level. To make it a soft deadline, go to the Properties tab for the Course > Time Options > Soft Deadline section. Set the Soft Deadline to ON to allow learners to be able to still access the content after that date.
